Apple and Cinnamon Spice Muffins


Cold weather always gets me in the mood to bake.  My hubby says that I'm addicted!  I bought a recipe book at Garden Ridge a while back that's simply called Muffins by Love Food.  I bookmarked a few of them to try.  This is the first one that I made.  Apples and cinnamon are a favorite in our home.  This recipe makes only 7 muffins, which is good.  We always have a hard time eating 15 muffins before they lose their freshness.  My daughter Taylor has eaten 4 of these since yesterday morning.  She really loves muffins and cinnamon apples are a favorite side dish.  This is the best of both worlds!  These muffins also use a mixture of whole wheat and white flour.  I made some changes to the original recipe.  I used Apple pie spice and extra ground cinnamon, and I used oats and melted butter in the topping.

Ingredients:

2/3 cup all-purpose whole wheat flour
1/2 cup all-purpose white flour
1 1/2 tsp baking powder
pinch of salt
1 tsp Apple pie spice
1/2 tsp ground cinnamon
1/4 cup granulated sugar
2 small apples, peeled, cored, and finely chopped
1/2 cup milk
1 egg
4 T butter, melted

Topping:
1/4 cup light brown sugar
1/2 tsp cinnamon
2-3 T old fashioned oats
1 T butter, melted

Preheat oven to 350 degrees.  Place 7 paper liners in a muffin pan.

Sift the whole wheat flour, white flour, baking powder, salt, and cinnamon together in a large bowl.  Stir in the sugar and chopped apples.  Place the milk, egg, and butter in a separate bowl and mix.  Add the wet ingredients to the dry ingredients and gently stir until just combined.

Divide the batter evenly between the muffin liners.


To make the topping, mix all ingredients together in a small bowl.


 Sprinkle topping over the muffins.

 
Bake for 18 minutes, or until risen and golden.  Place pan on a cooling rack for 5 minutes.  These are best served warm.  Enjoy!

  2. Do these ever look great. I just bought the most beautiful greek yogurt and I was trying to figure out what I could serve with it for a nice breakfast. These muffins would be perfect and are going on my must try list.

    I am really enjoying your blog. Your post yesterday about baking treats on fridays for your husband's work has inspired me - what a nice thing to do. I think I'm going to follow suit in your honour :-)

    And the bars have also gone on my "must try" list!

  6. These muffins look so delicious!! I loved your topping idea...so creative, I might add a few chopped pecans in my topping. Will have to make these as soon as I get my hands on a muffin pan.

  10. Rhondi, I agree, we can eat only so many muffins in this house so 7 is perfect! I'm making muffins today and the recipe makes 24 (ARGH) so I'm cutting it in half....and that's still too many.   11. definitely trying these.... I put a streusel topping on some muffins today for the first time...I usually am trying for less sugar and butter..so don't bother...but, just once in a while can't hurt.... can it? ...mmmmmmm

    I love anything apple too.... I should start a separate section for apple things.....
