Oatmeal Cherry Cranberry White Chocolate Chip Cookies


Whew-that's a mouthful for a cookie!  My oldest daughter was going on an all day field trip today with her class and I wanted to bake up some cookies for her to eat and share.  This is the recipe on the inside of the oatmeal lid, but I added some extra brown sugar.  Madison doesn't like raisins, so I added dried cherry cranberries and her absolute favorite white chocolate chips.  She will be making some new friends on the bus today with these special cookies!  And the fact that she's the sweetest kid helps too.

Ingredients:

2 sticks unsalted butter, softened
1 cup light brown sugar
1/2 cup white sugar
2 eggs
1 tsp pure vanilla extract
1 1/2 C all purpose flour
1 tsp baking soda
1 tsp cinnamon
pinch of salt
3 C Quaker old fashioned oats (regular ones)
3/4 C dried cherry cranberries
3/4 C white chocolate chips

Preheat oven to 350 degrees.  In a stand mixer, cream together the butter, brown sugar, and white sugar until creamy, about 2 minutes.  Add the eggs and vanilla and beat another 2 minutes.  Sift together the flour, baking soda, cinnamon, and salt.  Add to the wet ingredients and mix just until combined.  Add the oats, cranberries, and chocolate chips and mix well.  Drop by large rounded tablespoons onto a non-stick baking sheet.  Bake for 10-12 minutes, or until the edges are lightly golden and the center is set.  Remove from the oven and let sit on the hot baking sheet for another 3 minutes.  Remove to a wire rack to cool completely.  Store in an airtight container.  Enjoy!
